2 tins of artichokes ( I like the hearts )
1 1/2 cups of Parmesan cheese ( fresh kind )
1 cup of mayo ( don't get the reduced calorie kind )
Drain & rinse the artichokes
Set aside 1/2 cup of cheese
Blend all ingredients in a food processor until smooth
Put contents of processor in a baking dish ( glass seems to be best )
Add 1/2 cup of cheese on top
Bake in a preheated 350 degree oven for about 30 minutes or until bubbly
Serve with bread or crackers!

Cold beer, sauvignon blanc, or martini....
